Using our unique Total ImmersionSM approach, you will gain a comprehensive understanding of Italian cooking through a series of courses unlike any other. The FCI offers The Italian Culinary Experience, a comprehensive Italian cooking course focused on the Total ImmersionSM of not only Italian food, but their distinct culture and language as well.

Becoming a top Italian chef requires more than simply the ability to prepare dishes from the Northern and Southern regions of Italy. It requires becoming well-versed on the history of Italian cuisine and gaining a thorough understanding of the products and raw materials involved in regional Italian cooking. That is why this course provides hands-on, intense chef training at Italian cooking schools in both New York and Italy.

The curriculum begins with 1 week of classes to give students a better understanding of the Italian language and culture. The following nine weeks are dedicated to advanced training on Italian cooking while your Chef-Instructors continue to incorporate the language and culture into the curriculum. Beginning with an introduction to the professional kitchen and sanitation, the curriculum at our Italian cooking schools in New York will also include lectures on produce, valuable information on how to purchase, lectures on oils, vinegars and vinaigrette, as well as lessons on how to clean, prepare, handle, and properly store. The curriculum will also include in-depth tutorials on cooking the following Italian food:

  • Italian cheeses and antipasti
  • Stocks and sauces
  • Pasta - dried, fresh, and filled
  • Pizza and flatbreads
  • Fish
  • Meats
  • Contorni/side dishes - vegetables, greens, salads
  • Italian deserts

Once your nine weeks in New York City have been completed, you will then spend an additional nine weeks in Parma, Italy as a student of ALMA, one of the finest Italian cooking schools in all the world. At ALMA, The International School of Italian Cuisine, you will be guided by the leading representative of Italian cuisine in the world, Chef Gualtiero Marchesi, as well as other expert Italian chefs to sharpen your cooking skills and provide you with the techniques needed to become a first-rate Italian chef.

Your curriculum at the Italian culinary schools in Parma will consist of developing a comprehensive understanding of Italian food, wine, history, language, and culture, and will include lessons on the following:

  • History of Italian cuisine
  • Guest chef demonstrations
  • Products and raw materials
  • Cooking practice and recipes
  • Wines
  • Pastry
  • On-site visits to important production sites

Once the nine weeks of training is complete at your Italian cooking schools, you will then be placed in a selected restaurant for a period of nine weeks in order to put your acquired skills to the test in real world situations. During your staging period, you will apprentice in a noted kitchen and learn to work in high pressure situations to help prepare you for a future in Italian cooking.

Finally, this incredible class takes you back to our Italian cooking schools in New York City to finish up by having you cook for friends and family and take a final exam. The Italian Culinary Experience is a one-of-a-kind course that will not only give you the knowledge and techniques for cooking great Italian food, it will also immerse you in the language and culture to provide you with the ultimate Italian cooking experience.
