Learn How to Cook Italian Cuisine at The FCI

Do you wish you could take a complete cooking course on Italian cuisine, one that even takes you to Italy to study? Italy has a rich history, deep appreciation for art, and unique culture. These three aspects make studying their cuisine a pleasurable and deeply satisfying experience. The FCI is able to enhance that experience even more with the Italian Culinary Experience. This almost 30-week course teaches you many important aspects of Italian culture, language, cuisine, and the history of Italian cooking using our Total ImmersionSM technique which splits your environments of learning between a fully-equipped classroom kitchen and a professional Italian kitchen in a real-life restaurant, beginning your studies in New York City, then taking your experience overseas to Parma, Italy. This creates an intensive and comprehensive cooking course that allows the student to experience Italian cuisine and its crucial role in the country’s culture first-hand.

To start your journey, you'll have 10 weeks of instruction in New York City. This begins with one week of focused instruction on Italian language and culture. The next nine weeks are intensive training on Italian cuisine; Italian culture and language continue to be important components of your curriculum. You will learn the rich history of the Italian culture, including the birth and development of regional cuisine in order to understand the basis of the regional products and recipes and the relationship between the different food lore. You will also explore the similarities and differences between Northern and Southern Italian cuisine, not to mention the key techniques used in preparing both.

After finishing your first 10 weeks, you'll travel to Parma, Italy to study for nine weeks at ALMA, The International School of Italian Cuisine led by Gualtiero Marchesi. At ALMA your training takes on an added dimension as you cook side by side with expert Italian chefs in a fully-equipped, cutting-edge teaching and cooking facility. This is your perfect opportunity to absorb expert knowledge directly from the source.

Next, you will spend an additional nine weeks gaining real-life experience working in a noted Italian restaurant's kitchen. This intense period spent working in the fast-paced atmosphere of a professional stage will further solidify your studies and training. You'll prepare classic Italian cuisine while rubbing elbows with some of the best chefs in Italy. After experiencing what Italian cooking really is, you'll head back to New York City for a week of kitchen management training and your final exam.
